This delicious recipe will leave you saying, “OMG! I never knew carrots could taste so yummy”. The explosions of flavors make this a great side dish with chicken or turkey. The sweetness of the carrots combined with balsamic vinegar creates a perfect balance of tangy and sweet. Ingredients:
- 4 ounces carrot sticks
- 2 TBSP coconut oil
- 1 TBSP garlic
- 1 TBSP Balsamic Vinegar
- 1 TBSP basil
- Salt & Pepper to Taste
- Makes two servings
Directions:
- Take two tablespoons of coconut oil and melt completely.
- Add garlic, basil, and balsamic vinegar and mix well in a medium bowl.
- Once well mixed, coat carrots with the mixture completely.
- Place carrots on a baking sheet and bake at 425 degrees F. for 15 minutes or until crunchy.
Note: You can also use an air fryer for an extra crispy carrot fry.
